A Note About The Ingredients: A canola, coconut,or soybean oil-based baking spray, or organic raw virgin cocunut oil (ORVCO) is used to coat the baking pans. Wheat flour is also used to coat the pan unless a substitute is requested. In the event that ORVCO is used, a marking will be made on the packaging: TCO for “traces of coconut oil".
I am constantly searching for ways to make my product appealing and palatable to a broader spectrum of folk, including those with special nutritional preferences/ requirements. In my research/experience I have found that only the flour and sugar can realistically be substituted and not compromise the Spirit of this particular cake. Butter must be used in order for it to be a true butter cake. Therefore, I use the best butter available, one which is produced by grass-eating cows of New Zealand (or organic if this preferred butter isn't available). Eggs must be used, as any recipe calling for 3 or more eggs requires the unique composition of the eggs as a binding component, which cannot be achieved with an egg substitute - this is a dense, not fluffy cake. My source for this information is the good folks at Bob's Red Mill, whose knowledge and expertise I trust implicitly.
 
Substitute Ingredients of gluten-free & wheat-free flour; and granulated fructose or agave (if procurable) are available upon request for an additional charge of $5 per substitute item. Or, if you prefer, you are more than welcome to provide the substitute ingredient(s) yourself, in which case there would be no additional charge.
 
Footnote: We regret that, due to our specialty being a butter cake, which requires butter & buttermilk, as well as eggs ~ for it is a dense cake which requires eggs for binding ~ a vegan version of this cake is not an option. However, we can now boast of a VEGAN Triple Chocolate Ganache Cake worthy of gracing our menu, which you can bet will be the most amazing chocolate cake you've EVER tasted, bar none!
